Ingredients:

  • 4 large overripe bananas (approx. 450g)
  • 0.25 cup brown sugar (50g) packed
  • 1 tsp vanilla extract (5ml)
  • 1 tsp ground cinnamon
  • 15.25 oz yellow or spice cake mix (432g)
  • 0.75 cup salted butter (170g), sliced or melted
  • 0.5 cup chopped pecans or walnuts (60g)
  • 1 pinch sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Peel the bananas directly into a 9x13 inch baking dish.
  2. Use a potato masher or fork to crush the bananas until mostly smooth. Stir in the brown sugar, vanilla, and cinnamon directly in the pan until it forms a dark slurry.
  3. Sprinkle the dry cake mix evenly over the banana mixture. Use the back of a spoon to level the powder, but do not stir it into the bananas.
  4. Evenly distribute the chopped nuts and a pinch of sea salt over the cake mix layer.
  5. Place thin slices of cold butter across the entire surface or pour melted butter evenly, ensuring as much of the dry mix is covered as possible.
  6. Bake for 50 minutes until the top is golden brown and the banana base is bubbling at the edges.
