Ingredients:
- 2 cans (15 oz / 425g each) butter beans, drained and rinsed
- 2 cups (300g) cherry tomatoes, whole
- 1 block (7 oz / 200g) feta cheese, uncut
- 3 tbsp (45ml) extra virgin olive oil
- 4 cloves (20g) garlic, minced
- 1 tsp (2g) dried oregano
- ½ tsp (1g) smoked paprika
- ¼ tsp (1.5g) salt
- ¼ tsp (1g) black pepper
- 2 tbsp (30ml) fresh lemon juice
- ¼ cup (10g) fresh basil leaves, torn
Instructions:
- Preheat your oven to 400°F (200°C).
- In a 9x13 inch baking dish, combine the drained butter beans, cherry tomatoes, and minced garlic.
- Drizzle with olive oil and sprinkle in the oregano, smoked paprika, salt, and pepper. Stir gently until every bean is glistening with oil.
- Clear a space in the center of the beans and nestle the entire block of feta cheese directly into the middle.
- Bake for 40 minutes until the cherry tomatoes burst and the feta develops golden-brown, charred edges.
- Remove from oven. Using a wooden spoon, break up the softened feta and stir vigorously into the beans and tomatoes to create a creamy sauce.
- Stir in the lemon juice and fresh basil just before serving.
