Ingredients:

  • 2 cans (15 oz / 425g each) butter beans, drained and rinsed
  • 2 cups (300g) cherry tomatoes, whole
  • 1 block (7 oz / 200g) feta cheese, uncut
  • 3 tbsp (45ml) extra virgin olive oil
  • 4 cloves (20g) garlic, minced
  • 1 tsp (2g) dried oregano
  • ½ tsp (1g) smoked paprika
  • ¼ tsp (1.5g) salt
  • ¼ tsp (1g) black pepper
  • 2 tbsp (30ml) fresh lemon juice
  • ¼ cup (10g) fresh basil leaves, torn

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a 9x13 inch baking dish, combine the drained butter beans, cherry tomatoes, and minced garlic.
  3. Drizzle with olive oil and sprinkle in the oregano, smoked paprika, salt, and pepper. Stir gently until every bean is glistening with oil.
  4. Clear a space in the center of the beans and nestle the entire block of feta cheese directly into the middle.
  5. Bake for 40 minutes until the cherry tomatoes burst and the feta develops golden-brown, charred edges.
  6. Remove from oven. Using a wooden spoon, break up the softened feta and stir vigorously into the beans and tomatoes to create a creamy sauce.
  7. Stir in the lemon juice and fresh basil just before serving.
